One of my favorite salads to make is barley salad. You want to cook the barley and let it cool before you add all the ingredients. I use a rice cooker so it always comes out perfectly cooked.
My barley salad never comes out the same twice since I guesstimate and add whatever I have. Some of my all-time favorites to add are: peas, chopped black olives, chopped or shredded carrots, capers, chopped celery, chopped apples, chopped scallions or finely chopped red onion, tuna fish, a dash of salt and ground pepper, mayonnaise, a dash of balsamic vinegar, lemon juice, a pinch of garlic powder and you’ve got a healthy, tasty salad. Prepare ahead of time to let the flavors blend together and serve on a bed of lettuce.
